Pinot Noir.

Tasting notes

Colour: Bright, beautiful ruby red color.
Nose: Peppery and floral aromas with pronounced notes of blackcurrant.
Palate: A wine defined by finesse and freshness. The attack is both floral and expressive, offering an elegant blend of spices and blackcurrant.

Food and wine pairing

This wine will be the perfect companion to cooked meat, white and red meats such as a rack of lamb, pork tenderloin, entrecote steak, or a plate of French cheeses.

Serving suggestions

Serve ideally between 15°C and 16°C (59-61 °F).

Ageing potential

Already very pleasant, this wine can be kept for up to 5 or 6 years after its vintage, in the cellar.

Origin

Grapes were handpicked and carefully sorted, then carried in 16 kg boxes to protect them from crush and compaction.

After being sorted again on the table at their arrival at the winery, the grapes were placed in vats for maceration during 14 to 16 days. Then a cold pre-fermentation stage came for 24 hours and the start of the vinification for around 10 to 14 days.

The vinification continued in thermo-regulated concrete vats with daily pumping over and very few pigeages (cap punching placed at the beginning of fermentation).

Then, the wine was aged for 8 months in oak barrels with 25% new oak.

Light filtration before bottling.In the heart of the Côte Chalonnaise, in Burgundy, Rully is a village appellation including 23 climates classified as Premier Cru.
The whites extend over 246 Hectares (68 Ha in Premier Cru) and the reds 121 Ha (28 Ha in Premier Cru).

"Preaux" could be originated from the word "pria" which means "field with watering hole" ("pré avec un point d'eau").

Terroir

- Soil : Stony, limestone brown soil.

Vinification and maturing

Our Premier Cru Préaux parcel was hand-harvested on September 3rd and 7th, 2022. The Pinot Noir grapes, carefully transported in small crates to preserve their integrity, were meticulously sorted both in the vineyard and upon arrival at the winery.

The wine underwent a maceration period of 14 to 20 days, preceded by a 36-hour cold pre-fermentation maceration. Fermentations took place in temperature-controlled concrete vats, with daily pump-overs and a few punch-downs to ensure a gentle and balanced extraction.

The wine was then aged for 8 months in oak barrels, including 25% new oak. A light earth filtration was carried out prior to bottling.

Uncertain weather conditions all the year long, but mild in the end throughout the season!

The harvest, running from 25 August to 16 September. The grapes were beautifully healthy, with varying degrees of ripeness depending on the exposure.

Balanced, honest white wines. Maturing ought to bring just the right degree of roundness to red wines with varying qualities, depending on the maturity of each plot. We have both sophisticated, fruity red wines with a good Burgundy tension as well as rich, warmer ones.

A pleasant vintage in terms of quality with excellent yields for both whites and reds.

The vinification choices have been crucial as to whether to favour acidity or the alcoholic degree.
